A whole head of cauliflower lasts 3–5 days in the fridge at its best, cut florets and riced cauliflower 2–4 days, and cooked cauliflower 3–4 days. Blanched florets freeze for 8–12 months.

Cauliflower is a compact head of undeveloped white flower buds, called the curd, wrapped in green leaves. The pale curd shows every flaw: moisture sitting on the surface produces brown and black speckling within days. Riced or cut cauliflower has far more exposed surface and turns sour-smelling much sooner than an intact head.

  • Large dark brown or black areas that are soft or wet, rather than a few small dry freckles on the surface.
  • A slimy or sticky feel on the curd or on cut florets.
  • A strong sour or rotten-cabbage smell, which shows up first in riced or pre-cut cauliflower.
  • Fuzzy gray or black mold, or a curd that has gone soft and spongy.

Yes, if the spots are small, dry and only on the surface. Light brown freckles are oxidation, and you can shave them off with a knife. If the spots are widespread, dark, soft, slimy or fuzzy, or the head smells bad, it is decaying and should be thrown out.

Fresh riced cauliflower lasts about 2–4 days in the fridge, and store-bought packs should be used by the printed date. It is safe while it smells mild and feels dry. A strong sour or sulfur smell, moisture in the bag or any sliminess means it has spoiled.

Does purple or orange cauliflower keep as long as white?

Yes, colored varieties keep about the same 3–5 days as white cauliflower and are stored the same way. Their pigment hides early brown speckling, so check them by feel and smell instead: the curd should be firm, dry and mild-smelling.

How do you freeze cauliflower?

Cut it into even florets, blanch them in boiling water for 3 minutes, cool in ice water, drain and dry thoroughly, then freeze on a tray before bagging. Blanched cauliflower keeps its quality for 8–12 months at 0°F (−18°C). Cook it straight from frozen; thawing first makes it watery.
