How Long Does Chocolate Last?

Chocolate is cocoa solids and cocoa butter with sugar, plus milk solids in milk and white chocolate. It contains almost no water, so bacteria and mold do not grow in it, and cocoa's natural antioxidants protect dark chocolate especially well. What changes is quality: warmth and humidity cause white bloom, milk fats go stale, and chocolate absorbs nearby odors.

How to tell if chocolate has gone bad

  • Gray-white streaks or a dusty, dull film are bloom, not spoilage. The chocolate is safe but may taste a little waxy or gritty.
  • A stale, cardboard, sour-milk or rancid smell, most common in old milk or white chocolate and in bars with nuts.
  • A flavor of whatever was stored next to it, such as garlic, soap or spices.
  • Actual fuzzy mold, which is rare and usually confined to filled chocolates, fruit centers or chocolate that has been wet.
  • Small holes, webbing or larvae, especially in bars containing nuts.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Is the white stuff on my chocolate mold?

Almost never. White or gray streaks, spots or a dusty film on chocolate are bloom. Fat bloom happens when warmth makes cocoa butter rise to the surface and re-crystallize; sugar bloom happens when moisture dissolves sugar that then dries as a gritty coating. Both are safe to eat. Mold would be fuzzy and raised, and is rare because chocolate contains so little water.

Can you eat chocolate after the expiration date?

Yes, usually. The date on chocolate is a best-by date, and plain chocolate does not become unsafe with age because microbes cannot grow in it. Dark chocolate is often good for a year or more past the date, while milk and white chocolate turn stale sooner. If it smells rancid or sour, skip it.

Should you store chocolate in the fridge?

Not normally. A fridge is humid and full of odors, which leads to sugar bloom and off flavors, and cold chocolate tastes muted. A cool, dark cupboard is better. In a hot climate where the room is above about 75°F (24°C), refrigerate it sealed airtight and let it warm up before unwrapping.

Yes. Dark chocolate keeps up to about 2 years unopened, compared with around 1 year for milk and white chocolate. It has more cocoa solids, which contain natural antioxidants, and little or no milk fat, which is the ingredient that goes stale and rancid first.

Can you freeze chocolate?

Yes, for up to about a year unopened or 6 months once opened. Wrap it airtight, and move it through the fridge on the way in and out of the freezer so it changes temperature gradually. Sudden swings cause condensation and bloom.
