How Long Do Green Onions Last?
Green onions last 7–10 days in the fridge. Chopped green onions last 3–5 days in a sealed container, and they can be frozen for 3–4 months for use in cooked dishes.

Green onions, also called scallions, are young onions harvested before a bulb forms, eaten from the white base to the hollow green tops. Unlike cured storage onions they have no dry protective skin, so they behave like a leafy vegetable: the tops wilt and turn slimy in a damp bag within a week or so.
How to store green onions
- Remove the rubber band, which bruises the stalks, and pat the bunch dry before storing; store-mister moisture is the main cause of slimy tops.
- Wrap the bunch in a barely damp paper towel and place it in a bag or container in the crisper.
- Alternatively, stand them roots-down in a jar with an inch of water, cover the tops loosely with a bag, refrigerate, and change the water every 2–3 days.
- To freeze, wash, dry thoroughly and slice, then freeze loose in a bag or a clean, dry plastic bottle so you can shake out what you need.
How to tell if green onions have gone bad
- Slimy green tops or a slippery outer layer on the white part. If only the outside layer is affected, it can be peeled off a firm stalk.
- Dark green, wet, collapsed leaves that smear when touched.
- A sour or rotten smell instead of a fresh mild onion scent.
- Yellowed or brown, dried-out tops; these are just old and can be trimmed if the rest is firm.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Frequently asked questions
How do you keep green onions fresh longer?
Keep them dry on top and slightly moist at the roots. The two reliable methods are wrapping the bunch in a lightly damp paper towel inside a bag, or standing the roots in a jar of water in the fridge with a bag over the tops. Both hold them for 1–2 weeks, versus a few days in a wet produce bag.
What is the clear slime inside green onion leaves?
A clear, slightly gooey gel inside the hollow green tops is natural plant mucilage, and it is safe to eat. It is more noticeable in fresh, well-watered scallions. Slime on the outside of the stalks, together with wilting, dark color or a bad smell, is spoilage.
Can you freeze green onions?
Yes, chopped green onions freeze without blanching and keep good quality for 3–4 months. Dry them very well first so they do not clump. They thaw soft, so use them in soups, fried rice, eggs and other cooked dishes, not as a fresh garnish.
Can you regrow green onions in water, and are they safe to eat?
Yes. Stand the white root ends in a glass with enough water to cover the roots, keep it on a bright windowsill and change the water every day or two. New green tops grow within a week and are safe to eat. Replace the water often; cloudy, smelly water means it needs changing or the roots are rotting.
