How to store sausage
- Read the label first: uncooked or cook thoroughly means the 1–2 day rule; fully cooked means the longer smoked-sausage times.
- Separate fresh links before freezing and freeze them on a tray, then bag. Links frozen in the store tray weld together and tear when pried apart.
- Portion bulk breakfast sausage into patties with parchment between them; they cook from frozen in a covered skillet.
- Butcher-counter sausage wrapped in paper should be rewrapped airtight at home, as natural casings dry and toughen when exposed to fridge air.
