How Long Does Fresh Basil Last?
Fresh basil lasts 7–10 days on the counter with its stems in a glass of water. In the fridge it blackens within 3–5 days. Frozen as chopped basil in oil or as pesto, it keeps 4–6 months.
Fresh Basil — fresh
shelf life- Cut: 1–2 days in the fridge
Fridge at 40°F (4°C) or below · freezer at 0°F (−18°C). Freezer times are for best quality; frozen food stays safe longer.
Fresh basil is a tender, warm-climate herb, and that origin explains its odd storage rule: it suffers chilling injury below about 50°F (10°C), so a cold refrigerator turns the leaves black and limp within days. Treated like cut flowers, stems in a glass of water on the counter, a bunch stays green and fragrant far longer.
How to store fresh basil
- Trim the stem ends and stand the bunch in a glass with an inch of water on the counter, away from direct sun. Change the water every day or two.
- Drape a loose plastic bag over the leaves to hold in humidity, but do not seal it tightly or the leaves will sweat and rot.
- If the basil came in a plastic clamshell and must go in the fridge, put it in the door or the warmest spot, wrapped in a dry paper towel, and use it within a few days.
- To freeze, puree the leaves with olive oil and freeze in ice cube trays, or blanch whole leaves for a few seconds first; unblanched leaves frozen plain turn black.
- Do not wash basil until you are ready to use it. Water left on the leaves causes dark, slimy spots.
How to tell if fresh basil has gone bad
- Leaves turning black or dark brown, starting at the edges or wherever they were bruised or chilled.
- Slimy, wet, translucent leaves or stems, often at the bottom of a clamshell package.
- A musty, moldy or rotten smell replacing the sweet, clove-and-pepper aroma.
- White or gray fuzzy mold on the leaves or stems, or cloudy, foul-smelling water in the glass.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Frequently asked questions
Why does basil turn black in the fridge?
Basil turns black because it is damaged by cold. Temperatures below about 50°F (10°C) injure the leaf cells, which then darken and go limp, and a typical fridge runs at 40°F (4°C) or lower. A few dark spots are harmless, but keep basil on the counter in water to prevent it.
Can you freeze fresh basil?
Yes. Basil keeps 4–6 months in the freezer, though it will only be good for cooking afterward. The best methods are blending it with olive oil and freezing in ice cube trays, or freezing finished pesto. Whole raw leaves frozen plain turn black; blanching them for 2–3 seconds first keeps them green.
Is it safe to store basil in olive oil?
Only in the refrigerator for a few days, or in the freezer. Fresh herbs in oil create the low-oxygen, low-acid conditions in which botulism bacteria can grow, and the oil will not look or smell off. Keep homemade basil oil refrigerated and use it within 4 days, or freeze it.
Can I still use wilted basil?
Yes, if it is only limp and not slimy, moldy or foul-smelling. Wilted basil has lost water, not safety. Recut the stems and stand them in fresh water for an hour to perk it up, or use it in cooked sauces and pesto where texture does not matter.
How long does a supermarket basil plant last?
A potted supermarket basil plant usually lasts 2–4 weeks on a sunny windowsill, longer if repotted. These pots are crowded with many seedlings, so water from the bottom when the soil feels dry and harvest from the top, pinching just above a pair of leaves to encourage new growth.
