Fresh thyme has tiny leaves on thin, wiry stems that turn woody toward the base. Like rosemary it is a hardy Mediterranean herb with a low water content, so it keeps noticeably longer than soft herbs such as basil or cilantro. Left unwrapped it dries out; sealed in a wet package, the dense little sprigs trap moisture and mold.

  • Leaves turning brown or black and falling off the stems in a damp, clumped mass.
  • Cobweb-like white or gray mold among the sprigs, the most common way thyme in a plastic pack goes bad.
  • A musty or sour smell instead of the warm, earthy, slightly lemony fragrance.
  • Slimy stems. Brittle, dry, still-fragrant sprigs are not spoiled, just dried.
