- A sour or sharp smell on opening the container, instead of a savory beef and onion aroma.
- Gravy that has become slimy, stringy or foamy.
- Fuzzy mold on the surface or on vegetable pieces sticking out of the gravy.
- Gravy setting into a wobbly jelly in the fridge is gelatin from the beef, a sign of a good stew rather than spoilage.
