How Long Does Chili Last?

Chili is a thick stew of ground or cubed meat, beans, tomatoes and chile peppers, usually cooked in a large batch. The tomatoes make it slightly acidic, but not nearly enough to preserve it, and its density is a drawback for safety: thick chili holds heat for hours, so a deep pot cools far more slowly than a thin soup would.

  • A sour, fermented or yeasty smell that was not there when it was fresh.
  • Bubbles or foam in cold chili, or a container lid that has puffed up from gas.
  • White, green or blue fuzzy mold on the surface or where chili has dried on the container walls.
  • An orange-red layer of solid fat on top is normal in chilled chili and melts back in when heated.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Can you freeze chili?

Yes, chili freezes exceptionally well and holds its best quality for 2–3 months at 0°F (−18°C). Beans and ground meat keep their texture, unlike pasta or potatoes. Thaw it overnight in the fridge, or warm a frozen block slowly in a covered pot with a little water.

Is chili left in the crockpot overnight safe to eat?

Not if the cooker was switched off or unplugged; chili that cooled at room temperature for more than 2 hours should be thrown away. Beans and meat stews are classic sources of Clostridium perfringens, which multiplies as a thick dish cools slowly. Reheating the next day does not reliably make it safe.

Does the acidity or spice in chili keep it from spoiling?
