Bologna is a finely ground, emulsified sausage of cured pork, beef or chicken, cooked in a casing and sold as pre-sliced rounds, deli chubs or rings. How to store bologna
- Keep opened slices in the original resealable pack with the air pressed out, or in a zip-top bag. Exposed bologna dries, curls and darkens at the edges.
- Peel off the red ring. On most bologna it is an inedible plastic or fibrous casing, and removing it before storing avoids confusion later.
- A whole unsliced chub or ring keeps its quality better than slices; cut only what you need and wrap the cut face tightly in plastic wrap.
- Freeze slices in stacks of four or five between pieces of wax paper. Bologna's high fat content helps it keep its texture in the freezer better than lean turkey or roast beef.
