Cutting it exposes the moist interior, and softer deli styles such as Genoa or cooked cotto salami contain more water and keep far less time.
How to store salami
- Read the label first: 'keep refrigerated' or 'refrigerate after opening' tells you whether your salami is a shelf-stable dry type or a moister one that was never meant for the pantry.
- Wrap a cut salami in butcher or parchment paper, then loosely in a bag, and keep it in the fridge. Tight plastic wrap against the casing traps moisture and encourages slimy surface growth.
- Slice only what you need. The casing and the intact interior protect a whole chub far better than any wrap protects slices.
- Bring slices for a charcuterie board to room temperature for up to 2 hours for flavor, and return leftovers to the fridge, or discard slices that sat out longer.
How to tell if salami has gone bad
- Fuzzy mold that is green, black, blue or gray, or any mold on sliced salami. A dusty, even white powder on the casing of a whole dry salami is a harmless mold added on purpose during curing.
- A slimy or sticky surface on the cut face or the slices.
- A rancid, sour or ammonia smell. Good salami smells tangy, garlicky and slightly funky but clean.
- Edges turning brown or gray and hard, or fat that has yellowed and smells like old oil.
