How Long Does Cinnamon Last?

Ground cinnamon keeps its flavor for 2–3 years and cinnamon sticks for 3–4 years in a cool, dark cupboard. Older cinnamon is still safe to use but tastes faint and woody.

Cinnamon is the dried inner bark of Cinnamomum trees, sold as rolled sticks or ground to a powder; most US supermarket cinnamon is the stronger cassia type. It is completely dry, so it does not spoil. Its warmth and sweetness come from a volatile oil, cinnamaldehyde, which slowly evaporates, faster from powder than from tightly rolled sticks.

  • A weak, dusty or papery smell instead of a sweet, spicy warmth when you open the jar.
  • Flavor that is flat and woody, so recipes taste under-spiced even with the full measure.
  • Hard lumps from moisture, a musty odor or any mold. Discard these.
  • Tiny beetles, larvae or webbing in the jar.

Does cinnamon go bad or expire?

Cinnamon does not go bad in a safety sense; it loses strength. Ground cinnamon is at its best for 2–3 years and sticks for 3–4 years. The date on the jar is a quality guide. As long as the cinnamon is dry, mold-free and insect-free, it is safe to use well past that date.

Can I use ground cinnamon that is several years old in baking?

Yes, it is safe, but smell it first. If the aroma is still clearly sweet and spicy, use it as normal; if it is faint, increase the amount by about half. If it smells of almost nothing, replace it, because cinnamon rolls or snickerdoodles made with dead cinnamon taste disappointingly bland.

Do cinnamon sticks last longer than ground cinnamon?

Yes. Sticks keep their flavor for roughly 3–4 years because the tightly rolled bark protects the aromatic oil inside. Ground cinnamon has vastly more surface exposed to air and fades in 2–3 years. To check a stick, snap it or scrape it with a fingernail; it should smell strong immediately.

Does Ceylon cinnamon keep as long as cassia?

Roughly the same, but it fades more noticeably. Ceylon cinnamon is milder and more delicate to begin with, and its thin, papery quills have more exposed surface than thick cassia bark, so an old jar can taste of very little. The same 2–3 years for ground and 3–4 years for sticks applies.
