How to store vanilla extract
- Screw the cap on tightly after each use. The main way vanilla extract deteriorates is evaporation of its alcohol, which also carries off aroma.
- Store the bottle in a cupboard away from the oven and out of sunlight. The brown glass helps, but heat still drives off flavor.
- Do not refrigerate or freeze vanilla extract; cold can make it cloudy and may cause some flavor compounds to settle out.
- Keep beans in homemade extract completely covered with alcohol. Bean ends that poke above the liquid can dry out and grow mold.
- Store vanilla bean paste according to its label, and use it within the printed date; its sugar and thickener make it less permanent than extract.
How to tell if vanilla extract has gone bad
- A weak smell, or a harsh, chemical or mostly alcoholic odor with little vanilla, common in old imitation vanilla.
- Noticeably less liquid in the bottle and a syrupy texture, from alcohol evaporating past a loose cap.
- Mold on exposed bean tips in homemade extract.
- Cloudiness or sediment in pure extract is usually harmless, caused by cold storage or natural vanilla solids; shake and smell it before discarding.
