Dates are the very sweet fruit of the date palm, sold either soft and moist, like Medjool, or firmer and semi-dry, like Deglet Noor. Their sugar content is high enough to preserve them for months, but the softer the date, the more moisture it holds and the sooner it can sour, ferment or dry out.
How to store dates
- Keep dates in an airtight container wherever you store them; they readily pick up odors from onions, garlic and spices.
- Refrigerate Medjool and other soft dates if you will not finish them within a few weeks, and let them come to room temperature before eating for the best texture.
- Freeze dates in a freezer bag with the air pressed out; their sugar keeps them from freezing solid, so they thaw in minutes.
- Open each date and check around the pit before eating, because insects or mold occasionally hide inside otherwise perfect-looking fruit.
How to tell if dates have gone bad
- A sour, fermented or alcoholic smell, which shows the sugars have started to ferment.
- Dark, powdery or fuzzy mold inside the date around the pit, or on the skin.
- Insects, larvae or fine webbing in the package or inside the fruit.
- Dates that have become very hard and dry; they are safe but past their best, and can be soaked in hot water to soften.

Can you freeze dates?
Yes. Dates freeze very well and keep best quality for about 1 year in an airtight freezer bag. They stay slightly soft even when frozen, so they can be chopped or blended straight from the freezer, and they thaw on the counter in under half an hour.
How can you tell if dates have gone bad?
Bad dates smell sour or alcoholic, show mold inside or out, or contain insects. Wrinkled skin and a drier texture are normal aging, not spoilage. Split a few open to check the area around the pit, which is where problems usually start.
