How Long Do Walnuts Last?

Shelled walnuts keep 2–3 months in a cool pantry, about 6 months in the fridge and up to 1 year in the freezer. Walnuts still in the shell last about 6 months in the pantry.

Walnuts are one of the fastest nuts to go rancid. Their oil is rich in polyunsaturated fats, including the plant omega-3 ALA, and those fats react with oxygen far more readily than the fat in almonds or cashews. Shelled halves and chopped pieces have no protection at all, so walnuts are better treated as a refrigerator food than a pantry staple.

How to store walnuts

How to tell if walnuts have gone bad

  • A smell like paint thinner, nail polish remover or old cooking oil instead of a mild, slightly sweet nuttiness.
  • A harsh, bitter, throat-catching taste that goes well beyond the mild tannic bitterness of fresh walnut skin.
  • Kernels that have turned dark, yellowish-translucent, oily-looking or shriveled rather than plump and light tan.
  • A rubbery, bendy texture instead of a crisp break.
  • Mold, webbing or insect damage inside the shell or bag — discard all of them, not just the affected nuts.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Frequently asked questions

Why do my walnuts taste bitter?

A strong, lingering bitterness usually means the walnuts are rancid. Fresh walnuts have only a light astringency from the papery skin; rancid ones taste harsh and smell like paint or old oil. It happens quickly at room temperature because walnut oil is highly polyunsaturated. Throw them out, since the flavor carries into anything you bake.

Should walnuts be stored in the fridge or freezer?

Yes, either is better than the pantry. Shelled walnuts hold about 6 months in the fridge and up to 1 year in the freezer, compared with 2–3 months in a cupboard. Keep them in an airtight container so they stay dry and do not absorb odors from other food.

Is it safe to eat rancid walnuts?

A few rancid walnuts are unlikely to make you sick, but they are not worth eating. Oxidized oils taste bad, can upset the stomach, and offer none of the quality you bought walnuts for. Walnuts that are moldy or smell musty are a different matter and should always be discarded.

How long do walnuts in the shell last?

Walnuts in the shell keep about 6 months in a cool, dry pantry and around 1 year refrigerated. The shell blocks light and air, so they outlast shelled halves. Discard any that feel very light, rattle loosely or show cracks or holes in the shell, as the kernel inside has likely dried out or been attacked by insects.
