How Long Do Deviled Eggs Last?

Deviled eggs last 3–4 days in the fridge, though they taste best within 2 days. They should not sit out for more than 2 hours, and they do not freeze well.

Fridge at 40°F (4°C) or below · freezer at 0°F (−18°C). Freezer times are for best quality; frozen food stays safe longer.

Deviled eggs are halved hard-boiled eggs filled with a mixture of mashed yolk, mayonnaise, mustard and seasoning. They involve a lot of hand contact during peeling, halving and piping, and they are almost always served on a platter at room temperature at holidays and potlucks. That combination, more than the ingredients themselves, is what makes them a higher-risk party food.

How to store deviled eggs

How to tell if deviled eggs have gone bad

  • A sharp, sour or intensely sulfurous smell when the container is opened.
  • Filling that has turned darker, dried and cracked on top while wet or slimy underneath.
  • Whites that feel slimy or are sitting in cloudy liquid.
  • Any mold, or gray-green discoloration on the whites.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Frequently asked questions

How far in advance can you make deviled eggs?

You can make deviled eggs up to 2 days ahead for good quality, and they stay safe for 3–4 days refrigerated. For the best result, boil and peel the eggs and mix the filling ahead, store the two parts separately, and pipe the filling into the whites within a few hours of serving.

How long can deviled eggs sit out at a party?

Deviled eggs can sit out for up to 2 hours, or only 1 hour at an outdoor event above 90°F (32°C). That time is cumulative, so it includes transport without a cooler. Eggs that have exceeded it should be discarded, even if they look perfectly fine.

Can you freeze deviled eggs?

Freezing is not recommended. Cooked egg whites become tough, rubbery and watery after freezing, and the mayonnaise in the filling separates. The yolk filling on its own freezes somewhat better than the whites, but the results are still disappointing compared with making a fresh batch.

Are leftover deviled eggs safe to eat the next day?

Yes, as long as they were refrigerated within 2 hours of being put out and have been kept at 40°F (4°C) or colder since. Leftovers from a platter that sat out all afternoon are not safe. Eat properly stored leftovers within 3–4 days of when the eggs were prepared.
