Potato salad is cooked potatoes dressed with mayonnaise or a vinegar dressing, usually with hard-boiled egg, celery and onion. Contrary to picnic folklore, commercial mayonnaise is acidic and is not the main hazard. The cooked potatoes and eggs are the low-acid, moist ingredients bacteria grow on, particularly after a lot of hand contact during peeling and mixing.
How to store potato salad
- Cool the boiled potatoes before dressing them and chill the finished salad in a shallow container. A deep bowl of warm potato salad takes hours to cool through the center.
- Make it the day before the event at most, and keep it in the fridge until the moment you leave; transport it in a cooler with ice packs touching the container.
- At a cookout, serve from a small bowl set in a tray of ice and refill it from the cooler. Do not top up a bowl that has been sitting out.
- Use a clean spoon each time and keep the lid on. Salad that has been out for the length of a picnic should not go back in the fridge for later.
How to tell if potato salad has gone bad
- A sour, tangy or fermented smell that is sharper than the dressing's normal vinegar or mustard.
- Watery liquid pooling at the bottom with the dressing thinning out and turning slimy.
- Potatoes developing a slippery surface, or any gray, pink or fuzzy mold spots.
- A fizzy or sharp taste. Do not taste salad you already have doubts about to check.
