Evaporated milk is fresh milk with about 60 percent of its water removed, then homogenized, canned and heat-sterilized, which gives it a faint caramel color and taste. With no added sugar to protect it, it is as perishable as fresh milk once opened. In the can it slowly darkens and thickens, so it has a shorter quality life than most canned foods.

  • A sour smell or taste, like fresh milk that has turned.
  • Curdled lumps that do not shake or stir back in, or a thick, yogurt-like texture from the fridge.
  • A dark tan or brown color in an old can. It signals age and a cooked, stale flavor rather than danger, but quality is poor.
  • A swollen, leaking or spurting can. Discard it without tasting.
  • Mold on the surface or around the rim of an opened container.
