Canned coconut milk is grated coconut flesh blended with water, strained and heat-sterilized. It is rich in fat and low in acid, so it keeps for years sealed but sours within days once air reaches it. The thinner coconut milk beverage sold in cartons is a different product and follows the timings of other plant-based milks.

  • A sour, rancid or soapy smell. Fresh coconut milk smells sweet and nutty.
  • Pink, gray or yellow discoloration, or any mold on the surface or the jar rim.
  • A sour or fizzy taste, or a slimy, stringy texture that does not stir out.
  • A can that bulges, leaks or sprays when pierced. Do not taste it; coconut milk is low-acid, so a failed can is a botulism risk.

Stir or blend the two together, or warm the can gently. A sour smell, gray or pink color, or a bulging can are the real warning signs.

Opened canned coconut milk lasts 3–4 days in the fridge in a sealed, non-metal container. It has no preservatives and little acid, so it sours quickly. If you only needed half a can for a curry, freeze the rest the same day.

Can you freeze coconut milk?

Yes. Coconut milk freezes well for 2–3 months at best quality. The fat and water separate on thawing, giving a grainy look, but a quick whisk or blend brings it back. It works best in cooked dishes and smoothies afterward.
