Frozen burgers are pre-formed patties of raw ground beef, or turkey, chicken or plant protein, separated by paper and frozen in a box or bag. They are raw ground meat, in which any surface bacteria such as E. coli have been mixed all the way through, so freezing preserves them but does not make them safe to undercook. Thin patties with exposed edges are prone to freezer burn.
How to store frozen burgers
- Frozen patties can be cooked without thawing. Allow roughly 50 percent more cooking time and check the center with a thermometer: 160°F (71°C) for beef, 165°F (74°C) for turkey or chicken.
- After opening the box, keep the patties in a sealed freezer bag with the paper dividers in place so they separate easily and do not dry out.
- Thaw in the refrigerator on a plate on the lowest shelf, never on the counter, and cook within 1–2 days.
- Patties thawed in cold water or the microwave should be cooked immediately and not refrozen raw.
- Do not judge doneness by color; ground beef can turn brown before it reaches a safe temperature, or stay pink after it has.
How to tell if frozen burgers have gone bad
- Gray-brown, dry, leathery patches and ice crystals on the patties, which are freezer burn.
- Patties stuck together in a solid mass with frozen blood-tinged liquid, indicating a thaw and refreeze.
- After thawing, a sour or rancid smell or a sticky, slimy surface.
- Thawed patties that are gray or green throughout, not just slightly brown inside where oxygen did not reach.
