How Long Does Ground Beef Last?

Raw ground beef lasts 1–2 days in the fridge and 3–4 months in the freezer. Cooked ground beef keeps 3–4 days refrigerated. Do not leave it out for more than 2 hours.

Ground beef is beef trimmings run through a grinder, sold by lean-to-fat ratio such as 80/20 or 93/7. Grinding spreads any surface bacteria, including E. coli, through the whole batch and exposes far more meat to air, so it spoils much faster than a steak cut from the same animal and has to be cooked all the way through.

How to tell if ground beef has gone bad

  • A sour, tangy or rancid smell when the package is opened. Fresh ground beef has only a faint, slightly metallic smell.
  • A tacky or slimy surface that leaves a film on your fingers.
  • Gray or brown on the outside of the meat, not just in the middle, especially together with an off smell or stickiness.
  • Green or fuzzy spots, or a puffed-up package.
  • Cooked ground beef that smells sour or has turned slimy.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Fridge-thawed ground beef can be refrozen raw with some quality loss. Cook it right away if it was thawed in cold water or the microwave.

Not safe = perishable: no more than 2 hours at room temperature (1 hour above 90°F / 32°C). Not recommended = possible, but quality suffers or it serves no purpose.

Why is my ground beef brown or gray in the middle?

Gray-brown meat in the center of the package is normal and safe. Beef turns bright red only where oxygen reaches it, so the inside of a tightly packed block stays a dull color. Be more suspicious when the outside surface has gone gray or brown too, particularly with a sour smell or tacky feel, and discard it in that case.

How long is ground beef good after the sell-by date?

Ground beef is good for 1–2 days after you bring it home, whatever the sell-by date says. The date tells the store when to pull the package. If the date is tomorrow and you bought it three days ago, you are already past the safe window; if you freeze it on day one, the date no longer matters.

Can I eat ground beef that was left out overnight?

No. Raw or cooked ground beef that sat at room temperature for more than 2 hours should be thrown away. Bacteria multiply quickly between 40°F and 140°F (4–60°C), some produce toxins that survive cooking, and none of this changes how the meat smells or looks.

Can you freeze ground beef in its store packaging?

Yes, for short periods. The original tray is fine for a week or two, but the thin film lets air in and freezer burn sets in quickly. For the full 3–4 months of best quality at 0°F (−18°C), overwrap the tray in foil or freezer paper, or move the meat to a freezer bag with the air pressed out.

Is it safe to cook ground beef from frozen?

Yes, it is safe to cook ground beef straight from the freezer; it simply takes about 50 percent longer. Break it up as it softens in the pan and cook until it reaches 160°F (71°C) throughout. Do not thaw it on the counter, because the outside warms into the danger zone while the center is still frozen.
