Granola is rolled oats baked with oil and a sweetener such as honey or maple syrup, then mixed with nuts, seeds and dried fruit. Baking drives off the moisture, so it is shelf-stable, but the added oil and nuts oxidize and the clusters soften as they pull humidity from the air. Homemade granola, without sealed packaging, fades faster.
How to store granola
- Let homemade granola cool completely on the baking sheet before you jar it. Warm granola steams inside the container and turns soft, and can even mold.
- Store granola in a glass jar or airtight tub rather than the rolled-down bag, and keep it away from the steam of the stove or kettle.
- Stir in dried fruit only after baking, or store it separately, because fruit moisture migrates into the oats and softens the clusters.
- Freeze extra granola in a freezer bag with the air pressed out. It does not freeze solid, so you can pour out a serving and eat it within minutes.
- Re-crisp granola that has gone soft on a baking sheet at 300°F (150°C) for 5–10 minutes, then cool it fully.
How to tell if granola has gone bad
- A bitter, soapy or paint-like smell and taste from rancid oil, nuts or seeds. Granola with walnuts, pecans or flax turns first.
- Soft, chewy clusters that have lost their crunch. This is stale, not unsafe.
- Fuzzy mold or a musty smell, usually in granola that was stored warm, damp or with moist fruit.
- Webbing, clumped strands or small moths and larvae, signs of pantry pests in the oats.
