How to store pumpkin seeds
- Rinse fresh seeds free of stringy pulp and roast them within 2–3 days of carving. Wet seeds left in a bowl on the counter turn slimy and moldy quickly.
- Dry rinsed seeds thoroughly before roasting, and roast until crisp all the way through; any moisture left inside shortens the pantry life to days.
- Cool home-roasted seeds completely on the tray before jarring them. Sealing them warm traps steam and makes them soft and prone to mold.
- Keep opened bags of pepitas in the fridge or freezer. Their green color fades and the oil turns rancid within a few months at room temperature.
- Do not roast seeds from a jack-o'-lantern that has already sat out carved; use seeds removed on carving day.
