How Long Does Kale Last?

Kale is a sturdy cooking green in the cabbage family, sold in bunches (curly, lacinato, red Russian) or pre-chopped in bags. Its thick, waxy leaves lose water slowly, so it outlasts spinach and lettuce. As it ages it yellows and turns noticeably more bitter well before it actually rots.
How to store kale
- Wrap the unwashed bunch loosely in paper towels, put it in a plastic bag with most of the air pressed out, and keep it in the coldest part of the crisper.
- Kale gets more bitter the longer it sits, so use it raw in salads during the first few days and save older bunches for soups and sautés.
- Keep kale away from apples, pears and bananas; ethylene gas speeds up yellowing of the leaves.
- For freezing, strip the leaves from the stems, blanch 2–3 minutes, cool in ice water, squeeze dry and freeze flat in bags.
How to tell if kale has gone bad
- Leaves turning yellow or pale brown. Light yellowing is a quality loss, but widespread yellowing comes with a strong bitter taste.
- Slimy, wet or dark mushy patches, especially on pre-chopped bagged kale.
- A strong rotten-cabbage or sulfur odor from the bag or bunch.
- Black or fuzzy spots of mold on the leaves or stems.
