Pickles are cucumbers preserved in a vinegar brine or fermented in salt water. Shelf-stable jars are pasteurized and keep about a year sealed. Pickles sold from the refrigerated case are unpasteurized or lightly processed and must stay cold. After opening, the acid still protects them, but yeasts, molds and fingers in the jar eventually soften and spoil them.
How to store pickles
- Keep every pickle below the surface of the brine. Pieces sticking up into the air are the ones that soften and grow mold.
- Fish pickles out with a clean fork, not your fingers, which add bacteria and yeasts to the brine.
- Do not top up a jar with water, which dilutes the acid. If brine runs low, add a little vinegar of 5% acidity.
- Check where the jar was sold. Pickles from the refrigerated case need refrigeration from day one, even unopened.
- Leftover brine can be reused once for quick refrigerator pickles, but never for home canning, because its acidity is no longer known.
How to tell if pickles have gone bad
- Pickles that have turned soft, mushy or slimy instead of firm and crunchy.
- Fuzzy mold on pickles above the brine line, on the surface of the liquid or under the lid.
- A foul, rotten or strongly yeasty smell rather than clean dill, garlic and vinegar.
- A bulging lid, or fizzing and spurting from a jar of vinegar pickles that are not meant to be fermented.
- Cloudy brine in vinegar pickles. Naturally fermented pickles are normally cloudy, with white sediment at the bottom.
