How Long Do Cucumbers Last?
Whole cucumbers last 4–6 days in the fridge, sometimes up to a week. Sliced cucumbers last 2–3 days. They should not be frozen, because they thaw into mush.

Cucumbers are about 95 percent water, with a thin skin that is either waxed (standard slicing cucumbers) or shrink-wrapped (English cucumbers) to slow moisture loss. They are sensitive to cold: held for long below about 50°F (10°C) they develop watery, pitted spots, so even in the fridge they are a use-it-this-week vegetable.
How to store cucumbers
- Store cucumbers toward the front of the fridge or in the door-side of the crisper, the warmest spots, because very cold air near the back causes chilling damage.
- Leave the plastic shrink-wrap on English cucumbers until you cut them; it replaces the wax coating and stops them going limp.
- Dry standard cucumbers well and wrap them in a paper towel inside a loosely closed bag, since surface moisture is what starts the slime.
- Keep them away from tomatoes, bananas, apples and melons. Cucumbers are very sensitive to ethylene gas and turn yellow and soft around it.
- Wrap the cut end of a partly used cucumber tightly, or store slices in a sealed container lined with a paper towel.
How to tell if cucumbers have gone bad
- A slimy, milky-white film on the skin; this is bacterial decay and the cucumber should be discarded.
- Soft, mushy ends or sunken, water-soaked dents along the length.
- Skin turning yellow with a puffy, spongy feel, which also brings bitter flesh.
- Fuzzy white or gray mold, or a sour smell from a container of slices.

Why is my cucumber slimy on the outside?
A slimy film on a cucumber means spoilage bacteria have started breaking down the skin, usually because it was stored wet or too long. Do not wash it off and eat it; throw the cucumber away. If only one end has gone soft and the rest is firm and dry, you can cut well past the soft part.
Should cucumbers be kept in the fridge or on the counter?
The fridge is best for anything longer than a day or two. Cucumbers technically prefer about 50–55°F (10–13°C), warmer than a refrigerator, so they hold 1–3 days on a cool counter. In the fridge they last 4–6 days when kept in a warmer spot such as the front of a shelf.
How long do sliced cucumbers last in water?
Sliced cucumbers, including slices kept in water or in infused water, last 2–3 days in the fridge. Cut cucumber at room temperature should be refrigerated or thrown out after 2 hours. Change cucumber water daily, and discard it if it turns cloudy.
Can you freeze cucumbers?
Freezing is not recommended. Cucumbers are almost entirely water, so ice crystals destroy the cell structure and they thaw limp and watery. If you have too many, make refrigerator pickles, which keep for several weeks in the fridge, or blend them into a chilled soup.
