Almond butter is simply almonds ground to a paste, sometimes with salt or a little added oil. Most jars contain no stabilizers, so the oil separates and, once the jar is open and air gets in, slowly oxidizes. How to store almond butter
- Stir the separated oil all the way to the bottom when you first open the jar, then refrigerate. The cold thickens the butter and keeps the oil from rising again.
- Do not pour off the oil layer. Without it the remaining almond butter turns dry, crumbly and hard to spread.
- Dip only clean, dry utensils into the jar. Water, honey or jam carried in on a spoon is what allows mold to start.
