How Long Does Peanut Butter Last?

Peanut butter is ground roasted peanuts, usually with salt and, in conventional brands, sugar and a stabilizer that stops the oil from separating. It contains almost no water, so bacteria and mold struggle to grow in it; what ends its life is the oil turning rancid. Natural peanut butter, with nothing but peanuts and salt, goes rancid sooner than stabilized kinds.
How to store peanut butter
- Always use a clean, dry knife. Jelly, butter and crumbs carried into the jar bring in the moisture that lets mold grow in an otherwise very stable food.
- Stir natural peanut butter thoroughly when you first open it, then refrigerate; cold keeps the oil from separating again and slows rancidity.
- Store an unopened jar of natural peanut butter upside down in the pantry so the oil rises toward the bottom, which makes the first stir much easier.
- Keep conventional peanut butter in a cool cupboard with the lid screwed on tight, and move it to the fridge if a jar usually lasts you longer than 3 months.
- Take refrigerated peanut butter out 15–20 minutes before spreading, or scoop what you need and let that portion soften.
How to tell if peanut butter has gone bad
- A sharp, bitter, soapy or metallic smell and taste instead of roasted-peanut aroma — the oil is rancid.
- A dry, hard, darkened texture throughout the jar, well beyond the normal firmness at the bottom of a natural jar.
- Any mold, usually fuzzy spots where jelly or crumbs were left behind. Discard the whole jar; do not scoop it out.
- A layer of oil on top is not spoilage. It is normal separation, especially in natural peanut butter, and can simply be stirred back in.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.
