How Long Does Tahini Last?

Opened tahini lasts about 6 months in the fridge, or 1–2 months in the pantry at best quality. Unopened jars keep 6–12 months. Tahini sauce made with water and lemon lasts 3–5 days refrigerated.

Tahini is a paste of ground sesame seeds, usually hulled and lightly roasted, with nothing else added. Like natural peanut butter, it contains almost no water, so bacteria do not grow in it, but its oil separates and rises to the top and eventually goes rancid. Tahini sauce thinned with water, lemon and garlic is a different matter and is perishable.

How to tell if tahini has gone bad

  • A sharp, bitter, soapy or paint-like smell instead of a mild, nutty, toasted sesame aroma.
  • A harsh, markedly bitter or sour taste. Fresh tahini is only gently bitter.
  • Mold on the surface or sides of the jar, which follows contamination with water or food.
  • Prepared tahini sauce that smells sour, has turned slimy or has been refrigerated more than 5 days.
  • Oil floating on top and a dense layer at the bottom are normal separation, not spoilage.

Does tahini need to be refrigerated after opening?

Refrigeration is not essential for safety, but it is the better choice. Tahini is mostly sesame oil, which goes rancid with warmth and time. An opened jar stays fresh for about 6 months in the fridge, compared with 1–2 months in the pantry. The trade-off is a stiffer paste.

How do I know if tahini has gone bad?

Smell and taste it. Rancid tahini smells sharp, soapy or like old paint and tastes distinctly bitter or sour, well beyond the mild bitterness of fresh sesame paste. Oil separation does not count as spoilage. Any mold in the jar means it has been contaminated and should be discarded.

Is separated tahini with oil on top still good?

Yes. Separation is normal for tahini because it contains no emulsifiers, so the sesame oil rises and the solids sink and compact. Stir it until smooth. Do not pour the oil off, since the paste left behind will be dry, chalky and difficult to use.
