American cheese is a pasteurized process cheese: real cheese melted with emulsifying salts, then formed into slices or loaves. The heat treatment, salt and individual wrapping give it a much longer refrigerator life than natural cheese. Deli-sliced American from the counter has no individual wrap and keeps for a shorter time.
How to store american cheese
- Leave individually wrapped slices in their film until you use them, and keep the outer package closed so the edges do not dry and harden.
- Put deli-sliced American cheese in a zip-top bag with the air pressed out, keeping the deli paper between slices so they separate easily.
- Store it in the deli or cheese drawer rather than the door, where repeated warming makes slices sweat and turn oily.
- Buy deli-sliced cheese in amounts you will use within two weeks; ask for a half pound instead of a pound.

- Mold spots on any slice. Processed cheese is soft, so discard the affected slices and any they were touching rather than trimming.
- Dry, dark, cracked or hardened edges and a plasticky, stale taste.
- A sour or chemical smell, or a slimy, sticky surface on deli slices.
- Slices that have turned noticeably darker orange or developed an oily, separated sheen.
