Swiss cheese is a firm, pale cow's milk cheese whose holes, called eyes, are formed by gas from the cultures used to ripen it. It is a little moister and less salty than cheddar or Parmesan, so although an unopened block keeps for months, opened Swiss and especially deli slices dry out and mold sooner than drier hard cheeses.

  • Blue, green or black mold on the surface or inside the holes; on a block, cut away at least 1 inch around it, but discard moldy slices.
  • A slimy or tacky film on slices, often with a sour smell.
  • A strong ammonia, sour or barnyard odor instead of a mild, sweet, nutty one.
  • Hard, darkened, translucent edges from drying out, which is safe to trim but signals the cheese is past its best.

Sliced Swiss cheese lasts about 2–3 weeks once the package is opened or after it is cut at the deli counter. Slices have far more surface area than a block, so they dry and mold faster. Keep them tightly sealed, and discard the pack if slices turn slimy.

Is mold inside the holes of Swiss cheese dangerous?

It should be treated like any other mold on firm cheese. On a solid block, cut away at least 1 inch (2.5 cm) around and beneath the moldy hole, keeping the knife clean, and the rest is fine according to USDA guidance. If several holes are moldy, or the cheese is sliced, throw it away.

Can you freeze Swiss cheese?

Yes, for about 6 months at best quality. It becomes more crumbly after thawing and the slices may break, so frozen Swiss is best for melting on Reubens, burgers, quiche and fondue-style sauces. Thaw it in the fridge and use it within a few days.
