- Handle the block with clean hands or through the wrapper, since fingers transfer the mold spores and bacteria that start surface growth.
- For freezing, shred the cheddar or cut it into half-pound pieces first, press out the air and plan to use it melted rather than sliced.
How to tell if cheddar cheese has gone bad
- Blue, green or white fuzzy mold on the surface; on a firm block this can be cut away with a wide margin, unlike on soft cheese.
- A sour, yeasty or ammonia smell instead of the usual sharp, nutty aroma.
- A slimy or sticky film on the surface, or pink or orange discoloration.
