Unlike tuna or sardines, most are not heat-sterilized in the can; they are a semi-preserved product protected by salt, which is why many producers ask you to keep even unopened tins cool.   • A tin that is swollen or puffed at the lid, which with anchovies often means it was stored too warm. Discard it unopened.
  • A sour, putrid or sharply rancid smell, beyond the normal strong, salty fish aroma.
  • Fillets that have turned mushy, dark gray or are dissolving into the oil.
  • Mold on fillets that were sticking up above the oil line in an opened jar.
