How Long Does Canned Tuna Last?

Canned tuna is cooked, sealed and then heat-sterilized inside the can or pouch, which destroys bacteria and spores and makes it shelf-stable for years. It is a low-acid food, so the seal is everything: an intact can keeps almost indefinitely, while a damaged one can let Clostridium botulinum grow. Once opened, it is as perishable as any cooked fish.

How to tell if canned tuna has gone bad

  • A can that is bulging, leaking, badly dented on a seam, or that spurts liquid or foam when opened. Discard it without tasting; these are botulism warning signs.
  • A sharp, sour or ammonia smell instead of the normal mild, briny fish smell.
  • Flesh that has turned dark brown, greenish or black, or has a mushy, slimy feel.
  • Heavy rust that does not wipe off the can, or rust pitting that may have opened pinholes.
  • Opened tuna with any fuzzy mold, a sticky film or a fizzy, tingling taste.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Is canned tuna safe to eat after the expiration date?

Usually yes, if the can is in perfect condition. The date on canned tuna is a best-quality date, and USDA says commercially canned food stays safe well beyond it as long as the can is not bulging, leaking, rusted through or deeply dented. Expect softer, darker fish after several years. If the can looks damaged in any way, throw it out unopened.

How long does canned tuna last in the fridge once opened?

Opened canned tuna lasts 3–4 days in the fridge at 40°F (4°C) or colder. Transfer it to a covered container right after opening, and count the days from when you opened the can, not from when you mixed it into a salad.

Can you leave an open can of tuna out overnight?

No. Once the can is open, tuna is a perishable cooked fish and should not sit at room temperature for more than 2 hours, or 1 hour above 90°F (32°C). Bacteria that cause food poisoning do not change the smell or look of the fish, so tuna left out overnight should be discarded even if it seems fine.

Are dented tuna cans safe?

A small, shallow dent on the side of the can is generally fine. Discard cans with a deep dent you can lay a finger into, a dent with sharp points, or any dent on the top, bottom or side seam, because those can break the airtight seal and let bacteria in.

Can you freeze canned tuna?

Yes, but only after opening it. Move the tuna to a freezer bag or airtight container and use it within 2–3 months for best quality. Never freeze a sealed can on purpose: the contents expand and can stress the seams.
