Fish sauce is the amber liquid drawn from anchovies that have been packed in salt and fermented for many months. It is so salty that spoilage organisms cannot grow, which is why it has been kept without refrigeration for centuries. Once opened it slowly darkens, its flavor grows stronger and harsher, and salt crystals may form.
How to store fish sauce
- Screw the cap on firmly and wipe the threads. This protects flavor and keeps the powerful smell out of your cupboard.
- Store it in a dark cupboard away from the stove; light and heat drive the darkening and the shift toward a harsher taste.
- Refrigerate premium first-press fish sauce if you use it slowly, to hold its lighter color and cleaner flavor.
- Do not worry about clear crystals at the bottom of a chilled bottle. They are salt and do not need to be removed.
- Prepared dipping sauces such as nuoc cham, which add lime juice, garlic and water, are perishable: refrigerate and use within about 1 week.
How to tell if fish sauce has gone bad
- Mold on the surface or inside the neck, which is very rare and usually follows contamination with water or food.
- A rotten, putrid smell that is clearly different from the normal strong, briny, fermented aroma.
- Color changed from clear amber to nearly black, together with a bitter, acrid taste.
- Cloudiness with floating particles in a sauce that was previously clear. Salt crystals alone are harmless.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.
