How to store asparagus
- Treat asparagus like cut flowers: trim half an inch off the ends, stand the bunch upright in a jar with an inch of water, cover the tips loosely with a plastic bag and refrigerate.
- If there is no room for a jar, wrap the cut ends in a damp paper towel and store the bunch in an open bag in the crisper.
- Change cloudy jar water, and keep the tips dry. Wet tips are the first part to rot.
- Buy bunches with tight, compact, dry tips and ends that are not badly shriveled; bunches displayed standing in water or on ice at the store were handled better.
- For freezing, sort spears by thickness, blanch thin ones 2 minutes and thick ones 4, chill in ice water, dry and freeze flat.
How to tell if asparagus has gone bad
- Tips that are dark, mushy or slimy, often with a strong unpleasant smell. This is the first and clearest sign.
- A slimy film on the stalks, particularly under the rubber band.
- Limp, wrinkled stalks that droop when held. Without slime or odor this is only dehydration.
- Mold on the tips or at the cut ends.
