Green beans are the immature pods of the common bean, eaten whole while the seeds inside are still tiny. A fresh bean snaps cleanly in two. In storage the pods lose moisture and turn limp and leathery, or, if they are kept wet, develop rusty brown spots and slime, usually within the week.

  • A slimy or sticky surface, or beans stuck together in wet clumps in the bag.
  • Widespread brown or rust-colored spots together with soft, mushy patches.
  • Limp, rubbery pods that bend without snapping. They are old, though still usable cooked if there is no slime or mold.
  • White or gray fuzzy mold, often starting where beans touch each other, or a sour smell.

Yes, if the beans are still firm. A few small brown or rusty spots come from bruising, age or cold damage, and you can trim them off. If the spots are large and soft, or the beans are slimy, moldy or smell sour, throw them away.

You can, but they are best used within 2–3 months. Without blanching, the enzymes in the beans keep working in the freezer and the beans turn dull, tough and off-flavored over time. A 3-minute blanch gives 8–12 months of good quality at 0°F (−18°C).

Green bean casserole lasts 3–4 days in the fridge. Refrigerate it within 2 hours of serving, which is the rule that matters most at holiday meals where dishes sit on the table. Reheat it to 165°F (74°C). The fried onion topping will soften; add fresh ones when reheating.

Why are home-canned green beans a botulism risk?

Green beans are a low-acid vegetable, and the CDC identifies improperly home-canned vegetables, green beans among them, as a common source of botulism outbreaks in the US. They must be pressure-canned using a tested process. Discard any jar that is bulging, leaking, spurts liquid or smells off, without tasting it.
