How to tell if tuna steak has gone bad
- A sour, sharp or ammonia smell. Fresh tuna smells clean and almost meaty, not fishy.
- Flesh turning from red or deep pink to dull brown with a rainbow-dull, sticky surface. Slight browning alone is oxidation, but combined with odor or slime it means spoilage.
- A slimy or tacky film, or flesh that feels mushy and separates along the muscle lines.
- A peppery, metallic or tingling taste on the first bite is a warning sign of histamine. Stop eating it.
