How Long Does Coconut Water Last?

Opened coconut water lasts 1–2 days in the fridge. Unopened shelf-stable cartons keep 9–12 months in the pantry. Fresh coconut water straight from the coconut should also be drunk within 1–2 days.

Coconut water is the clear liquid from inside young green coconuts, sold heat-treated in cartons and cans or cold-pressed in refrigerated bottles. Unlike citrus juice it is barely acidic, and it carries natural sugars and minerals, so once opened it spoils quickly and gives bacteria far fewer obstacles than most fruit drinks do.

How to store coconut water

How to tell if coconut water has gone bad

  • A sour, vinegary or sharply fermented smell instead of a faint sweet, nutty one.
  • Fizz or carbonation in a product that is not meant to be sparkling.
  • Cloudiness, thickening or a slimy feel; good coconut water is thin and nearly clear.
  • A swollen carton or can. A pink tint in raw, cold-pressed coconut water is a natural reaction and not spoilage.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Frequently asked questions

Why does coconut water go bad so fast after opening?

Because it is a low-acid, sugary liquid with no preservatives. Citrus juices are protected by their acidity, but coconut water sits close to neutral, so microbes that get in when the seal is broken multiply quickly even in the fridge. That is why 1–2 days is the practical limit.

Why is my coconut water pink?

Pink coconut water is usually not spoiled. Natural enzymes and antioxidants in raw or minimally processed coconut water react with light and oxygen and gradually turn it pink, and some brands explain this on the bottle. Judge it by the date, the smell and the taste: sourness or fizz means discard it.

Can you drink coconut water past its expiration date?

Unopened shelf-stable coconut water is generally still safe for a while past its best-by date if the package is intact and not swollen, though the taste declines. Refrigerated cold-pressed coconut water is different; its use-by date should be respected, because it has not been heat-sterilized.

Can coconut water be frozen?

Yes, for about 1–2 months at best quality. It freezes and thaws without separating much, although the flavor is slightly flatter afterward. Ice cube trays are the most useful format. Do not freeze it in its sealed carton or can, which can split.
