Cottage cheese is a fresh, unaged cheese of loose milk curds in a lightly salted cream dressing. It is wet, mild and barely acidic compared with yogurt, so it has little natural protection and is one of the quickest dairy foods to spoil. Once the seal is broken it sours, turns bitter and grows mold within days.

  • A sour, yeasty or musty smell; fresh cottage cheese smells clean and faintly milky.
  • A bitter or sharply sour taste, or curds that feel slimy rather than soft.
  • Pink, yellow or green discoloration, or fuzzy mold on the surface or under the lid.
  • A swollen lid, or a large amount of separated, watery liquid with shrunken, gritty curds.

Can you eat cottage cheese past the expiration date?

It is best not to go more than a few days past it, and only if the tub is unopened and has always been cold. Cottage cheese has less acid and more moisture than yogurt or sour cream, so it has less margin. Signs of spoilage mean discard, but a normal smell does not prove safety.

Why is my cottage cheese watery?

A little thin liquid is normal: whey drains from the curds as the tub sits, especially after some has been scooped out. Stir it back in. If the liquid is excessive and the curds are slimy, gritty, sour-smelling or discolored, the cottage cheese has spoiled and should be thrown away.

Can cottage cheese be frozen?

Freezing cottage cheese is safe but not recommended. The curds break down and turn mushy and watery on thawing, and the cream dressing separates. If you have a surplus, it is acceptable only blended into cooked dishes such as lasagna, pancakes or baked casseroles, within about 3 months.
