How Long Does Eggplant Last?

Whole eggplant lasts 3–5 days in the fridge, or 1–2 days on a cool counter. Cut eggplant should be used within 1–2 days, and cooked eggplant keeps 3–4 days.

Eggplant is a spongy-fleshed fruiting vegetable with glossy purple skin. It is a warm-climate plant and dislikes the cold: after several days at refrigerator temperature it develops pitted skin and brown seeds and flesh. At room temperature it shrivels instead. Either way it is a vegetable to buy close to the day you cook it.

  • Skin that has lost its shine and turned dull, wrinkled or bronze-brown with soft, sunken spots.
  • Flesh that is brown and mushy throughout when cut, not just a little tan around the seeds.
  • A slimy surface or liquid leaking from the skin.
  • Mold on the green cap or stem, or a sour, off smell.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Is eggplant that is brown inside safe to eat?

It depends on the kind of brown. Light tan shading around the seeds, or browning that appears after you cut it, is normal oxidation and safe. Flesh that is already dark brown, soft and mushy when you first cut it open, or that smells off, has deteriorated and should be discarded.

Should eggplant be stored in the fridge or on the counter?

Refrigerate it unless you are cooking it within 1–2 days. Eggplant keeps best at around 50°F (10°C), which no home kitchen offers, so the fridge is the lesser evil: it gives you 3–5 days before chilling injury shows up as pitting and brown flesh.

Can you freeze raw eggplant?

Freezing eggplant raw is not recommended, because its spongy flesh turns watery, brown and bitter. Cook it first. Roasted or grilled slices and purée for baba ganoush keep good quality for 6–8 months at 0°F (−18°C). Blanched slices work too.

Can you eat raw eggplant?

A small amount of raw eggplant is not dangerous for most people, but it is bitter and spongy and it is normally cooked. Eggplant is a nightshade and contains small amounts of solanine, at levels far too low to matter in normal portions. The leaves and flowers should not be eaten.
