  • Soft, mushy or sunken patches in the skin, often with liquid seeping out.
  • A slimy or sticky white film on the surface or on cut ends.
  • Flesh inside that is stringy, spongy or brownish rather than pale and crisp.
  • Fuzzy mold at the stem or blossom end.
  • A rubbery zucchini that bends easily; it is dehydrated, which is a quality problem, but check carefully for the signs above.

Why does my zucchini taste very bitter, and is it safe?

An intensely bitter zucchini should not be eaten. Strong bitterness comes from cucurbitacins, natural compounds that are occasionally produced at high levels in squash, particularly home-grown or stressed plants, and they can cause severe stomach upset. Cooking does not destroy them. Spit it out and discard the squash; normal mild zucchini is not a concern.

How long do zucchini noodles last in the fridge?

Zucchini noodles last 2–3 days in the fridge in a sealed container lined with paper towels. They release water as they sit, so drain them before cooking. Store-bought zoodles should be used by the date on the pack. Discard them if they are slimy or smell sour.

Can you freeze zucchini without blanching?

Yes, for shredded zucchini going into bread, muffins or fritters; freeze it raw and use it within about 3 months. Slices or chunks for soups and sautés should be blanched for 3 minutes first, which keeps color and texture for 8–12 months. Frozen zucchini is always soft after thawing.
