How Long Does Ghee Last?

Opened ghee lasts about 3 months in the pantry and 6–12 months in the fridge. An unopened jar keeps around 9–12 months in a cool, dark cupboard.

Ghee is butter simmered until its water evaporates and its milk solids brown and are strained out, leaving almost pure butterfat. With no water and next to no protein or sugar, bacteria and mold have nothing to grow on, which is why ghee keeps in the pantry. What eventually ruins it is rancidity, or water introduced by a wet spoon.

How to tell if ghee has gone bad

  • A sour, sharp, soapy or stale crayon-like smell instead of a sweet, nutty, caramel aroma.
  • A bitter or acrid taste that catches at the back of the throat.
  • Spots of mold on the surface or on the glass, a sign that water or food got into the jar.
  • A marked change to a whitish, dull color throughout together with an off smell. Graininess or separate liquid and solid layers alone are normal.

Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.

Why is my ghee grainy or separated?

That is normal and harmless. Ghee is a mix of fats that solidify at different temperatures, so if it cools slowly it forms grains or a liquid layer over a solid one. To make it smooth again, melt it gently and chill it quickly. It is not a sign of spoilage.

Can ghee go bad?

Yes, though slowly. Ghee goes rancid as its fat oxidizes, giving a sour, soapy or paint-like smell and a bitter taste. Rancid ghee is not likely to make you acutely ill, but it tastes bad and should be thrown out. Mold can also grow if water gets into the jar.

Is ghee still good after the best-by date?

Frequently, if the jar is unopened or has been stored well. The date on ghee is about flavor quality, not safety. Smell and taste a small amount: if it is still sweet and nutty with no sourness or bitterness, it is fine to cook with.
