How Long Does Coconut Oil Last?
Opened coconut oil lasts 1–2 years in the pantry. Unopened jars keep about 2 years, and often longer for virgin oil. Refrigeration is not needed; melting and re-solidifying is normal.

Coconut oil is pressed from coconut meat and is about 90 percent saturated fat, which makes it solid below roughly 76°F (24°C) and unusually resistant to oxidation. It therefore outlasts most cooking oils. It still turns rancid eventually, and the most common cause of early spoilage is water or food carried into the jar on a spoon.
How to store coconut oil
- Scoop with a clean, completely dry spoon. Water droplets or crumbs introduced into the jar are what allow mold to grow in coconut oil.
- Keep the jar in a cupboard away from the stove and sunlight, with the lid screwed on firmly.
- Do not worry when it swings between liquid in summer and solid in winter; changing state does not harm the oil.
- If you use coconut oil for skin or hair as well, keep a separate jar for that so fingers never go into the cooking jar.
- If the oil is too hard to scoop, stand the jar in warm water for a few minutes instead of microwaving it repeatedly.
How to tell if coconut oil has gone bad
- A sour, bitter, soapy or paint-like smell replacing the mild coconut scent, or the neutral scent of refined oil.
- A yellow tint in oil that should be pure white when solid and clear when liquid.
- Dark green, black or brown spots of mold, usually on the surface or where a wet spoon has been.
- A blotchy, curdled or chunky consistency that remains even after the oil is fully melted.
- A harsh, scratchy or bitter taste at the back of the throat.

Does coconut oil go bad?
Yes, eventually. Coconut oil is very stable because it is mostly saturated fat, but it still turns rancid after about 1–2 years once opened. Rancid oil smells sour or soapy and looks yellowish. It can also grow mold if water or food gets into the jar, in which case discard all of it.
Does coconut oil need to be refrigerated?
No. Coconut oil keeps perfectly well in a cool, dark pantry, and refrigeration makes it too hard to scoop. The fridge will not harm it, though, and may help if your kitchen is regularly very hot. Either way, keep the lid tight and water out.
Is it bad if coconut oil melts and hardens again?
No, that is completely normal. Coconut oil melts at about 76°F (24°C), so it turns liquid in a warm kitchen and solid again when the room cools. Repeated melting does not make it spoil faster in any meaningful way. A grainy or uneven look after re-solidifying is only texture.
Can I use coconut oil past its expiration date?
Often yes, if it has been stored well. The printed date is a best-by date, and coconut oil frequently stays good for months beyond it. Melt a little and smell it. If it is white or clear with a clean smell, it is fine; if it is yellow, sour or bitter, replace it.
