Vegetable oil usually means refined soybean, canola, corn or sunflower oil, or a blend of them. Refining removes most flavor and impurities, which makes these oils neutral and fairly stable, but they are high in polyunsaturated fats that oxidize. Over months, exposure to air, heat and light turns the oil rancid. Used frying oil breaks down much faster.
How to store vegetable oil
- Keep the bottle in a cupboard well away from the stove, not on the counter beside it; repeated warmth speeds rancidity.
- Screw the cap back on after every use, because oxygen in an open or half-empty bottle is what degrades the oil.
- If you buy gallon jugs, pour a few weeks' supply into a smaller bottle and keep the jug sealed in a cool, dark place.
- Let used frying oil cool, strain it through a fine sieve or coffee filter, and store it sealed in the fridge for 1–3 months.
