Like all ground meat it has bacteria distributed throughout rather than only on the surface, and it is relatively fatty, so it spoils quickly in the fridge and its flavor turns strong in long freezer storage.
How to store ground lamb
- Ground lamb turns over slowly in many stores. Check the pack date, buy the freshest package and freeze it that day unless you are cooking within 2 days.
- Flatten one-pound portions in freezer bags for quick thawing, and label them; frozen ground lamb and beef look alike.
- Shape kofta, meatballs or burgers the day you buy the meat and freeze the shaped raw pieces on a tray, rather than keeping a seasoned raw mix in the fridge.
- Drain cooked ground lamb before refrigerating. Its fat sets firm and waxy when cold and coats the whole dish.
How to tell if ground lamb has gone bad
- A sour or sharp, soapy-rancid smell on top of lamb's normal mild gaminess.
- A sticky or slimy feel, or meat that strings when pulled apart.
- Gray-brown or greenish color across the outside of the block, not only in the oxygen-starved center.
- Cooked lamb dishes that smell sour or show mold.
