Ground turkey is minced turkey meat, often with some skin and dark meat, sold in trays or sealed one-pound chubs at leanness levels from 85 to 99 percent. As ground poultry it carries Salmonella risk throughout the meat, not just on the surface, and it stays pale when spoiled, which makes problems easy to miss.
How to store ground turkey
- Sealed chubs and gas-flushed trays often carry a use-by or freeze-by date set by the packer. Follow it while the package is unopened; once opened, you have 1–2 days.
- Chubs can be frozen as they are. For tray packs, rewrap or bag the meat, since the loose film invites freezer burn on such lean meat.
- Thaw ground turkey on a plate on the bottom shelf. Chub ends are crimped, not welded, and often leak as the meat thaws.
- Cook a double batch of taco meat, chili or meat sauce and freeze the cooked portions, which keep 2–3 months and reheat faster than thawing raw meat.
How to tell if ground turkey has gone bad
- A sour, sulfur or gamey smell. Fresh ground turkey has almost no smell at all.
- Light pink fading to dull gray or tan across the surface.
- A slimy, slippery film instead of the normal soft, slightly sticky texture.
- A swollen chub or tray, or milky liquid in the package.
- Cooked ground turkey that smells sour or feels slick.
