Homemade guacamole lasts 1–2 days in the fridge, and store-bought guacamole 1–2 days once opened. Do not leave it out for more than 2 hours. It can be frozen for 3–4 months.

Guacamole is mashed avocado mixed with lime juice, salt, onion, cilantro and often tomato and chili. Avocado flesh browns within hours when an enzyme in it reacts with oxygen, and because the dip is made from raw, fresh-cut ingredients and is only mildly acidic, it is also a perishable food with a short refrigerated life.
How to store guacamole
- Pack guacamole into the smallest container that fits it, smooth the top, and press plastic wrap directly onto the surface so no air touches it before putting the lid on.
- Alternatively, pour a half-inch layer of cool water or a thin film of lime juice over the smoothed surface, seal, and pour it off before stirring and serving.
- Leaving the pit in the bowl only protects the patch of guacamole directly beneath it. Keeping air away from the surface is what prevents browning.
- Freeze plain mashed avocado with lime juice and salt in a zip-top bag pressed flat with all the air out, and stir in fresh onion, tomato and cilantro after thawing; those ingredients turn watery when frozen.
- Serve it in a bowl nested in ice at cookouts and put out small amounts at a time.
How to tell if guacamole has gone bad
- A sour, fermented or rancid smell, or a sharp, bitter, tangy taste.
- Brown or gray color that goes deep into the dip, not just a thin layer on top, together with a watery, separated texture.
- Any mold, often white or gray fuzz, on the surface or container walls.
- A pool of liquid with a slimy feel. A little clear liquid from the tomatoes is normal on day two.
Bacteria that cause food poisoning usually do not change the look, smell or taste of food. Go by the time limits first, and the signs above second.
