Hummus is a puree of cooked chickpeas, tahini, lemon juice, garlic and olive oil. It is moist, only mildly acidic and rich in protein, so despite the lemon it is a perishable food that must stay refrigerated. Commercial tubs are made with preservatives or high-pressure processing, which helps them last unopened, but every dip of a chip or carrot adds new bacteria.

How to tell if hummus has gone bad

  • A sour, fermented or sharp tang beyond the normal lemon, often with a fizzy sensation on the tongue.
  • Mold on the surface or around the rim, which may be white, green, blue or black. Do not scoop it off; the whole tub goes.
  • A bulging lid or a hiss of gas when you open the container.
  • A hard, dark, cracked crust means the tub has been open a long while. A thin layer of separated oil or water on top is normal and can be stirred back in.
