Halibut is a very large flatfish with firm, snow-white, lean flesh, sold as thick steaks and fillets and priced as a premium fish. Its low fat content lets it freeze well for months, but in the fridge it has the same short clock as any raw fish, and its dense flesh dries out fast when it is stored unwrapped or overcooked.

  • Raw flesh that has lost its glossy, translucent white look and turned dull, yellowish or gray.
  • A sour or ammonia odor. Fresh halibut smells faintly sweet and of clean seawater.
  • A tacky or slimy surface, or flesh that no longer springs back when pressed.
  • Chalky, opaque white patches in raw halibut are a texture defect that cooks up dry and mushy; it is a quality flaw, not a safety hazard.

Wild halibut can carry parasites, which the FDA advises controlling by freezing fish intended for raw dishes such as ceviche. Lime juice does not kill parasites or bacteria, so use previously frozen fish and keep ceviche refrigerated.
