It is one of the species most often linked to histamine (scombroid) poisoning, because the toxin forms quickly if the fish warms up after it is caught and is not destroyed by cooking. Unbroken cold storage is essential.
How to store mahi-mahi
- Buy mahi-mahi last on your shopping trip and carry it home cold. Even an hour in a hot car can start histamine forming, and that damage cannot be undone by chilling or cooking.
- Store fillets skin-side down on a plate of ice in the coldest part of the fridge, wrapped so the flesh does not touch meltwater.
- Leave the skin on for freezing; it shields one side of the fillet. Wrap tightly, bag, and freeze flat.
- Marinate mahi-mahi in the fridge for no more than 30 minutes in citrus-based marinades, which start to turn the surface mushy, and never reuse the marinade.
How to tell if mahi-mahi has gone bad
- The dark red bloodline running down the fillet turning brown or dull; on fresh fish it is bright red.
- Flesh fading from pinkish-beige and translucent to gray or yellow, with a sticky film.
- A sour, ammonia or strongly fishy smell.
- A sharp, peppery or metallic taste, or a tingling mouth, can signal histamine even in fish that looked and smelled normal. Stop eating at once.
